Pita Pocket Bread

I love pita bread!  It is easier than you think to make.  I really think you should try it!

Pita Pocket Bread

1 cup warm water
2 tsp yeast
1 Tbls honey

3 1/2 cups whole wheat flour
1/2 tsp salt
1 1/2 Tbls oil

You can add a little garlic and other spices for fun!

Mix together first 3 ingredients and let sit till frothy.
Add all remaining ingredients and knead for 5 mins.
Put in oiled bowl and let dough rise.  45mins till doubled.
Divide into 8 balls of dough(keep them covered) roll into flat rounds about 6" across.
Let the rounds rise till slightly puffy.
Bake in HOT oven 550 on bottom rack for 41/2 mins.
Note - Only a sudden blast of heat will make the pockets.  It is a good idea to start with 2 pita's on the sheet to make sure the oven is hot enough.

Yum! We love making pita bread - but have never made it with whole wheat. Sometimes the pita doesn't form a pocket - is that because the oven wasn't hot enough? I've got this one book marked!

Melinda - Yes that oven has to be hot! If you keep opening the oven door...you might have to wait for it to get back to temperature. Some people pre-heat the baking sheet too.

I haven't tried pitas yet, but they have been on my list for a long time -- thanks for letting me know they are easy to make :)

I'm going to try making these. We love using whole wheat and your pitas are really pretty! Do they split in half well? Thanks.

So, I just needed to let you know that you inspired me to finally try making pita bread (I think I bookmarked a recipe about 6 months ago). I made it today and it came out fantastic! I didn't use your recipe, but you were my inspiration to make it. ;) Thanks!
