Pappadums!

This past weekend I have been acting as hostess to a couple from Germany.  We met this couple while vacationing in Nova Scotia this summer, and they decided to stop by for a visit as they are traveling for a year through the continent.  I was worried at first to what to serve people from Germany.  But was very happy to realize they eat the same as my family (as healthy as possible)!   On Saturday we decided to have a nice curry.  While we were shopping for ingredients my new German friend was very excited to find Pappadums at my grocery store!  Now I have never had a pappadum, I usually don't give boxed foods a second look.  But I said sure that I would try them, when I found out they are made from lentils!

They are so yummy!  And so much fun to watch cook!  They are described as lentil crackers.  We found out not to go by the instructions on the box.   We tried the pan fry method and it did not work.  So the microwave had to do.  What you do is, throw one Pappadum in the microwave for 45 seconds and voila! it is done!  We did not add oil as suggested.

See pictures!
Who would of thought I would learn about Indian food from Germans?  The Pappadums are a bit spicy and salty...but makes a very yummy (not so bad for you) treat!  I wonder if I can find a recipe to make my own?

Watch My Weight Wednesday!

This week I have not lost any weight...again.  I really need to kick it in to high gear!  A few social events coming up in the near future.  Maybe this will be the extra motivation I need!

This summer has been so busy! With only a few more weeks to go before my kids go back to school, and the kids will be away with relatives for those few weeks.  I am hoping this will give me the time to concentrate on me and my weight loss goals.

So my goal is 10lbs in 8 weeks!  I have done this before so I know how hard it will be.
  • Planning meals ahead of time
  • Keeping track of my water
  • Adding more daily physical activity
  • No cheating on weekends

Calling out for Zucchini recipes!

Hello?  No it's not a phone silly.  Just a huge zucchini my neighbor brought over today.

I need some ideas on what to do with this guy.

Hoping some of you will send some awesome recipes my way?

Spinach Smoothie

I have a confession.  I have never had a smoothie with spinach till today.  I am not sure why I have never tried it, maybe I just didn't have any at the time I was making smoothies?  But today I was in the fridge pulling out fruit and yogurt ingredients for my smoothie and saw the spinach.  So I decided to give it a whirl!  I was surprised, you don't even taste the spinach in there!  It was so yummy too!
I make smoothies all the time, and you know me, I just throw in what I have around.

Today's smoothie recipe
  • half a mango
  • handful of blue berries
  • big handful of baby spinach
  • half cup yogurt
  • half a banana
  • about 6 ice cubes
Throw all in a blender, and whirl till smooth!  Enjoy!

Watch My Weight Wednesday! I'm Back!

Welcome back to WMWW! I have been away the last 2 weeks on a Nova Scotia road trip with the family. I was really hoping to find internet while I was away to get some posts up...but that just didn't happen.  I apologize for being MIA.

My goal was not to eat at any fastfood places while being away. We were camping so it was pretty easy to stay away from fastfood. But we did find that some provinces don't make it easy for travelers to find a place to picnic.  This at a busy New Brunswick rest stop.  The kids had lots of fun running in the field around the big sign.  There were no picnic tables to be found so we made do!

On a side note Quebec had awesome rest stops!  Clean Washrooms, picnic tables, and lots of green park space for the children to run about!

My weight did go up a little due to vacationing.  We did eat pizza twice during our 2 week vacation.  But all the rest was food from the grocery store.

Getting back to normal has taken a few days but I am positive that I will lose the extra weight fairly quickly.

What have you all been up too?

Banana Crackers! Yummy!

Hi all!  Today I am sharing a fun recipe you can make with the kids this summer.  Perfect for those summer rainy days!  Kids will just love playing with real dough, and then baking it up into a tasty snack!

Banana Crackers

  •   2 cups  Whole Wheat Flour
  •   1/4 tsp Salt
  •   1/8 tsp Baking Soda
  •   6 tbls Apple Sauce
  •   2/3 cup  Mashed Banana (1 large)
  •   2 tbls Honey
  •   2 tbls Warm Water

Preheat oven to 350 degrees F.

Combine the flour, salt, and baking soda in a large bowl; stir in the apple sauce until the mixture resembles coarse meal. Add the banana and blend well.

In a separate bowl, dissolve the honey in the warm water.

Slowly add the honey/water to the flour/banana mixture and blend to form a dough that will hold together in a ball.

Divide the dough into 2 equal portions and roll the dough thinly.

Cut out squares or shapes using a cookie cutter.

Arrange crackers on a lightly greased cookie sheet.  Or use your silicone mat.

Prick each cracker in 2 or 3 places with the tines of a fork.

Bake for 15 to 20 minutes, turning over once during baking. These crackers should be medium brown.  Cool on a rack.
