Veggie Bread

So what's a gal going to do when she is trying to eat healthy?  Hey why not put vegetables in your bread!  Why not!  You can throw any veggies you like in this bread and add any herbs and spices too!  A meal in a slice!  Excellent with soup or salad, or with grilled cheese on it!  My kids really like it..and.your kids will too!

Veggie Bread

1 2/3 cups warm water                                               Mix water, yeast, and honey.  Let sit until nice and frothy
1 Tbls yeast
1 1/2 Tbls honey

Chopped veggies(I use a food processor)Have fun with this and change it up to what your family likes!
  • 2 tomatoes
  • 2 carrots                                                           Add all remaining ingredients.
  • 1-2 sticks of celery
  • 1 onion
  • 1/2 green pepper
1 1/2 Tbls oil
5-6 cups whole wheat flour                                         Reserve some flour for kneading.  The veggies will release some liquid as you knead.
1 tsp salt

Dried Herbs                                                              Knead for 5mins, and leave dough covered in an oiled bowl to rise.  45min-60min.

  • 2 tsp oregano                                                    Punch down and shape into 2 loaves and let rise in an oiled loaf pan or baking sheet till
  • 2 tsp garlic powder                                             doubled in size.
  • 2 tsp Basil                                                          Bake in a 350 oven for 45 mins
  • 2 tsp marjoram


    Pita Pocket Bread

    I love pita bread!  It is easier than you think to make.  I really think you should try it!

    Pita Pocket Bread

    1 cup warm water
    2 tsp yeast
    1 Tbls honey

    3 1/2 cups whole wheat flour
    1/2 tsp salt
    1 1/2 Tbls oil

    You can add a little garlic and other spices for fun!

    Mix together first 3 ingredients and let sit till frothy.
    Add all remaining ingredients and knead for 5 mins.
    Put in oiled bowl and let dough rise.  45mins till doubled.
    Divide into 8 balls of dough(keep them covered) roll into flat rounds about 6" across.
    Let the rounds rise till slightly puffy.
    Bake in HOT oven 550 on bottom rack for 41/2 mins.
    Note - Only a sudden blast of heat will make the pockets.  It is a good idea to start with 2 pita's on the sheet to make sure the oven is hot enough.

    Carrot Bread

    I am still on my quest to make a yummy carrot bread!  So I just bought a fresh bag of carrots,  I figure out if I have all the ingredients, when I realize my son has cooked up all my eggs!  But surely you can substitute eggs with something else?  So I google and find that yes you can!  There were so many to choose from...so I chose the easiest one, milk :)
    So while I wait for the bread to bake I will tell you what I did.

    Ingredients
    1 1/2 Cups whole wheat flour
    1 tsp Baking Soda
    1/4 tsp Baking Powder
    1 tsp Cinnamon
    1/2 cup Walnuts
    1/2 cup Raisins

    I mixed all of the above together in a big mixing bowl, and in a big measuring cup I mixed the below ingredients.
     
    1 cup of carrots shredded - I shredded 2 carrots and it was a bit more over a cup...oh well :)
    1/2 cup of apple sauce
    150 ml milk
    3/4 cup Agave Syrup (or you can use 1cup of sugar)

    Pour in to dry ingredient and mix well.  I decided at this point to throw in some unsweetened shredded coconut...let say 1/4 cup just for fun...
    As you know I do not have a loaf pan so I poured the batter into a greased casserole dish...threw it in a 350 preheated oven...and now I am waiting  :)

    So checked it about 20min in, and realized that I forgot to sprinkle the sunflower seeds on!  So sprinkled them on.  But it didn't work they all are just loose on top :(  oh well.  I baked it for 40-45 mins.

    It turned out a bit heavy, but it is so very yummy!  I think next time I may try using yeast to make it more like bread. I would describe this recipe as a not very sweet carrot cake.  But all in all....the kids love it so I would say it was successful!

    Homemade Bread


    So this morning I asked Kaitie if I could make a special treat for her and her friends for a party she is going to today. And she asks if I can make a loaf of bread for her to take!!! Not brownies, cookies, or cinnamon buns...BREAD! I guess I shouldn't complain :)  So I made her bread!  I used a cookie cutter for the heart shape for fun!  I hope they enjoy it!

    Naan Bread


    I just love naan!  Naan can be used in so many ways, beside your curry, pizza crust, for you favourite dips, and what ever you can think of!  The store bought ones come in so many flavours now!  So I have been busy in the kitchen to find the kind I like.  This recipe is so easy and you might just have all the ingredients already!  It makes 4 but I am sure you can double it if needed.  Enjoy!.




     Ingredients
    • 1 tsp dried active yeast
    • 1 tsp sugar
    • 1 cup plain flour
    • ¼ tsp salt
    • ½ tsp baking powder
    • 1 tbsp vegetable oil
    • 2 tbsp natural yogurt
    • 2 tbsp milk 
    • A dash of your favourite seasoning  
    Mix 1 teaspoon of dried yeast with 1 tablespoon of warm water in a small bowl.
    Stir a teaspoon of sugar into the yeast mixture. Put the bowl in a warm place, and leave it for 5 minutes, until the yeast is covered with froth.

    While the yeast begins to froth, start to mix the dough. In a large mixing bowl, put
          1 cup of plain flour,
          1/4 teaspoon of salt, and
          1/2 teaspoon of baking powder.
           and a dash of you favourite seasoning
    Mix well.

    Stir in 1 tablespoon of vegetable oil, 2 tablespoons of natural yogurt, 2 tablespoons of milk and the yeast mixture, which should be frothy by now. Mix a little, with a spoon.

    Kneading until you have a soft pliable dough. It should take about 5-6 minutes.

    Dampen a tea towel or small cloth, and use it to cover the mixing bowl. Leave it in a warm place to rise for 10 to 15 minutes.

     Preheat the oven to 275.

    When the dough is ready.  Lightly sprinkle flour over a clean work surface. Divide the dough into 4 balls. With a rolling pin, roll each into a long oval shape, about half a centimetre. Don't roll them out too thinly.

    Place the ovals of dough onto a oiled baking sheet, or as I use, a silicone mat with no oil.  Bake in the oven for 15 minutes, or under bake them a little to freeze or to reheat later. 

    To bake later or from frozen(thawed) sprinkle with a little water and bake for just a few minutes till heated through out.

    Serve warm and enjoy!

    Homemade with love Whole Wheat Bread


    Made a lovely loaf a bread today that I would like to share!  I did attempt to make Italian bread today as well but it didn't turn out very well.  But that didn't stop my family from enjoying it  :)  This recipe is so easy and works every time!  check older post for recipe you will not be disappointed!  Enjoy!  I know we will :)

    Whole Wheat Honey Bread

    I love bread!  Especially when I make the perfect loaf!  Bread making is not hard but you do need to have patience.  And you must follow the recipe order.
    I am stubborn and hate following recipes or being told what to do  :)  But after making many unsuccessful loaves (lead bread)  I have now relented and follow the order of the recipe.

    Whole Wheat Honey Bread Recipe Ingredients:

    1 cup warm water
    1 1/4 teaspoons salt
    2 1/2 tsp dry yeast
    1/4 cup olive oil
    1/4 cup honey
    1/3 cup milk
    2 cups Whole Wheat Flour
    1 1/2 cups All Purpose Flour

    In a large mixing bowl combine 1 cup of water (at a temp. of 110 to 120 degrees F) with the salt, and the yeast and mix.

    Add the oil, the honey, and the milk and stir until mix.

    Mix in the flour and stir until the dough starts pull away from the bowl.

    Place the dough on a lightly flour surface and knead the dough for 6 to 10 minutes or until the dough become smooth.

    Place a small amount of flour in a large bowl and place the dough in the bowl and flip the dough to cover the dough with flour. Cover the bowl with a towel and let the dough rise for approx. 1 hour, the dough should double in size. Note: This may take longer if the room is cold.

    Take the dough out of the bowl and place on a lightly floured surface, shape the dough into an 8 inch log.

    Loosely cover with towel and let raise for 30 to 60 minutes until the dough raises approx.1 inch around.

    This is when I sometimes get creative and make my cuts and shapes on the top of loaf!

    Preheat oven to 350 degrees F place in center of oven and cook for about 40 minutes.  Let bread cool then slice.
