Quick Quesadilla's

Quick Quesadilla's

Sometimes during the holiday you will find you are to busy to make a whole healthy meal.  That is why I always relies on this quick and healthy recipe!  It one of our family favorites!

I always use what ever I have in the fridge!  
  • tomato diced
  • green onion sliced
  • soft cooked black beans(can substitute w/chickpea's, or leftover chicken or beef)
  • frozen corn
  • jalapeno pepper, diced real small, no seeds.(this gives it some kick...just enough that kids will still like it)
  • shredded marble cheddar cheese
Arrange ingredients in separate bowl and let you family members load up there own tortilla's!  When they are done, fold in half, and bake till cheese is melted and tortilla crisp!
So simple! So yummy!  No extra seasoning required!
Eat it with a side of salad and Enjoy!

Yummy Curry

This may not be the healthiest curry dish and it is in no way good for your waist line!  But it is our favourite meal!  I alter this dish to the ingredients I have on hand.  It's all good, and my kids love it!  The coconut milk makes it a little sweet to accompany the spicy!

Ingredients

Onion, green onion, or not at all.
1 fresh green chili, or chili spice.
Vegetables any, all or none what ever you have.
Tomatoes I throw in one or two of my frozen roma toms chopped or purred.(no skin) or not at all!
ginger fresh or powder

Protein - Chicken, sprouted chickpeas, both or 1 as much as you need to feed your family!...let me know if you try something different that works!
fresh cilantro (go out buy this it is so good for you!) chop leaves I dont use the stems.
1 tbls curry paste or use curry powder.
1 can of coconut milk (yes I said can...but it is so good!  Still looking for a replacement)
Almonds if you got them!  So yummy!
unsweetened shredded coconut - handful
Dried fruit raisins, apricots, figs...or none
a little freshly ground pepper

Cook first group of ingredients for about 10 min on medium heat.  You may use a little oil if wanted.
Add the rest of the ingredients and simmer for 20-30 mins.  Add a little water if needed.

Serve with a dollop of natural yogurt, top with almonds, fresh cilantro, and a little squeezed lemon if you like. Beside rice, couscous, homemade naan, and/or chopped green salad!

Beef Soup


Today I have Andrew at home with a bit of a mild cold.  We never did get the ingredients for the Waldorf salad he was hoping to make yesterday.  He was to tired to go to the store yesterday.  So that will have to wait till he is feeling better. 

Leftovers never get wasted in our house.  I always cook extra's just to have leftovers available for new meals.  Last night we had yummy leftover roast beef soup!  So easy to make, and didn't have to go to the store for any special ingredients!  With this recipe you can add what ever you have in your fridge, my soup is never the same one twice.  And the best bonus of making your own soup is no MSG, BPA, and you can control how much salt to put in.  I don't use any salt.  And remember to freeze soup leftovers for handy lunches.  I find that I have to freeze leftovers right away if I don't want them to be forgotten in the fridge before they expire.  Remember do not freeze meat twice.

Beef Soup

Leftover roast beef cut into chunks
Any left over gravy
Beef broth/water
carrots, onion, peppers, potato, celery, mushrooms, any veggies you happen to have in the fridge!
Favorite spices I used Mrs Dash herb and garlic.

Chop ingredients cook them up while adding as much liquid as you need. boil till cooked!  Not to long to make veggies to squishy.  Enjoy!
