Strawberry Spinach Salad with Honey Dijon Salad Dressing

A very yummy lunch I had today!  A folded flat bread sandwich with chicken, cheese, red peppers, mushrooms, green onion, with a little chipotle sauce to spice it up!

Today's salad was what I had on hand...I really need to go shopping!   You could add so much more to this salad!  You could add nuts, sprouts, any veggie you like!  Today I had...

Strawberry Spinach Salad

Fresh organic baby spinach, with strawberries sliced on top,  and some toasted sesame seeds!

Honey Dijon Salad Dressing
Honey
Dijon grainy mustard
white wine vinegar

Measure equal parts honey and mustard and add vinegar till the right consistency!
Very yummy!

I'd like to do this but with blueberries. Not that I don't enjoy strawberries. Hankering for the blueberries. I'm hungry. I need to eat now.

Yumminess! My DH actually fixed me a very similar sandwich last night for dinner! It was onion and mushrooms sauteed in a little Worcestershire sauce, with roasted red peppers, spinach, and chicken. - SO GOOD!

Yum! I love spinach + strawberries. I'm planting spinach tomorrow and can't wait to have some garden fresh salads with it!

Ohhh that looks like a lovely lunch! Mmm. I have a ton of spinach (and strawberries) so I think I'll pick up some dijon and give that dressing a try.

I cannot count how many bottles of Annie's Dijon Mustard I've been through in this pregnancy. Can't wait to try a new twist on a condiment now considered a food group in this house!
