Baked Potobello Mushrooms


Portobello mushrooms were on sale this week!  This is an easy recipe that helps you use up your leftovers.  I used leftover chickpea taco mix for mine!  And they were so yummy!

Ingredients
Portobello Mushrooms
Bread crumbs/Cornflakes
Favourite seasonings
egg
leftover taco mix, tomato sauce, be creative?
cheese

preheat oven to 400
remove stems from mushrooms and prepare
Mix bread crumbs with seaoning in a bowl/plate.
Whisk egg in different bowl.
Dip both sides of mushroom into egg.  Dredge in crumb mix until both sides are coated.
bake in oven 15-20min till mushrooms are tender.
Reset oven temp to 450.
Top mushroom with taco mix and cheese.
Return to oven and bake till mix is heated thoroughly and cheese is melted.

This sounds great - what comes to mind first is to fry up the stems and some onions/peppers/zucchini in some olive oil with a little salt and whatever herbs you have around (tarragon!). Then mix it up with cottage cheese, put it in the cap, cover it with some yummy cheese (asiago?) and bake. Yum. Can't wait to try this one.
Speaking of mushrooms on sale - I found 2 bags of portabellos on the discount rack. They looked like they had been manhandled a few too many times, but otherwise ok. So I cut them up, fried them and then added water to make a stock. After a couple of hours, I strained off the stock and put it away, and then I laid out the mushroom pieces on a cookie sheet and stuck them in the freezer. After a couple of hours, I put them in a freezer bag. Now I have fancy mushrooms for soups, sauces, risottos, etc. And on the cheap!

I never heard about Portobello mushrooms before. Can I used other kinds of mushrooms for this healthy recipe? I really love following every healthy easy recipes you are posting.
