I made this yummy salsa for the enchilada's.  I prefer my salsa fresh like the first pic...But you can cook it up so it is more like the kind you buy at the store.  Jay likes it that way...So I do both  :)

diced tomatoes you can use your frozen ones or fresh
thinly sliced green onion
chopped cilantro leaves
lemon or lime juice
garlic clove crushed
green chili pepper
Diced Peppers
other add ins corn and black beans  Yum

Mix all together and refrigerate!
