Grilled Lime Chicken with Yummy Chipotle Sauce!

 I was inspired to cook this meal when I recieved my first farm share of the season!  I paired the chicken with an easy fresh cole slaw!

Ingredients:
9 boneless skinless chicken thighs
1/2 cup plain yogurt
1 lime, juiced
1 tbsp olive oil
4 cloves garlic
1 tbsp paprika
1 tsp rosemary
1 tsp fresh ground black pepper

For the Sauce:
1/2 cup yogurt
1 lime juice
2 tsp chipotle sauce


Directions:
  1. Mix all ingredients in bowl or bag and marinade for 2 hours.  You do not want to marinade to long when using yogurt as a base. 
  2. Then make the sauce and refridgerate till ready to serve.
  3. When ready, grill till cooked!  The nice thing with thighs is that they are so easy and fast to grill!

This is so yummy! Grilling chicken lets out more fat and oil from the chicken, and partnering it with veggies increases its health value. Boneless chicken is best for every meal and it makes dining easier. We should also take note to avoid chicken skin as much as possible because it has a really high cholesterol rate.

Oh I love this treats, thanks for sharing here. I have some recipe to share.

Ceasar salad, mayo mustard based

5 pieces Grilled sliced chicken
Romaine lettuce, washed and diced.
7 pieces Parmesan cheese shavings
1 pinch salt and pepper
3 spoonful heaps of mayo mustard mix
Diced croutons
chopped parsley

Procedure: Mix all the ingredients, make sure not to squeeze or crush lettuce as they will their crunchiness and fresh appearance. Balance the amount of of may mustard, too much mayo mustard will be too oily. Garnish with chopped parsley and parmesan cheese shavings
