Fit Meals Monday!


So I am attempting to plan my meals once again. And what better day to start, then the day after Halloween! I am really excited about this new blog hop Fit Meals Monday.   This blog hop is for us mom's to share our family’s healthy food meal plan for the week!  so here I go!

Monday - Black Bean Burgers with a side salad.
Tuesday - Butternut Squash Soup
Wednesday - Roast Beef, roasted potatoes and veggies!
Thursday - Beef Fajita's (to use up leftover roast)
Friday - Thai Peanut Noodles
Not sure of the weekend yet...just baby steps for me  :)

Sounds GREAT! The black bean burger sounds yummy! I'll have to try that on one of my Meatless Monday's! I love connecting with others. It really opens your horizons. Thanks for opening mine this morning!

We love black beans, and usually make a big batch in our crock pot (using dried beans).

I was wondering how you make yours?

Hi Liz,
I use dry beans too. I soak em, and cook em. I think I will try using my crock pot too. How long do they take in a crock? Can you skip the soaking? I am always looking for easier ways to get things done :)

I haven't ever tried skipping the soaking (because i am scared of having crunchy beans!)...

We usually put them in the crock pot, and leave them to cook all day 6-8 hours.

Then we put them into small ziplock bags - 15oz per bag and freeze. that way if we come across a recipe that calls for a "can of black beans" we generally have the right amount... it's so easy to defrost a bag or two to use.

I saw this blog hop and really wanted to participate but since I cook for one I end up eating the same thing 3-4 days a week.

I love black beans and may try the burger.

The weekends are the hardest.

Planning meals a week out is not my strong suit. I tend to take it one day at a time and planning the night before. Being a stay at home mama makes this very doable. I'm sure that will have to change once the kid is school age and I possibly go back to work. I'd love to sit around the table every one of those nights!

Good for you! I really want to start planning. I'm horrible at it but I'm glad that I have so much healthy stuff at my fingertips. I think it's amazing that my kids eat a legume at least once a day if not twice. Hoping to make fruits and veggies the same.

One thing I do for fruits is smoothies. It's huge in Rio to make them. The fav in my house is banana and papaya. Throw in a little oatmeal and it's a good start to the day.
