Banana Crackers! Yummy!



Hi all!  Today I am sharing a fun recipe you can make with the kids this summer.  Perfect for those summer rainy days!  Kids will just love playing with real dough, and then baking it up into a tasty snack!
 
Banana Crackers

  •   2 cups  Whole Wheat Flour
  •   1/4 tsp Salt
  •   1/8 tsp Baking Soda
  •   6 tbls Apple Sauce
  •   2/3 cup  Mashed Banana (1 large)
  •   2 tbls Honey
  •   2 tbls Warm Water

Preheat oven to 350 degrees F.
 
Combine the flour, salt, and baking soda in a large bowl; stir in the apple sauce until the mixture resembles coarse meal. Add the banana and blend well.

In a separate bowl, dissolve the honey in the warm water.

Slowly add the honey/water to the flour/banana mixture and blend to form a dough that will hold together in a ball.
 
Divide the dough into 2 equal portions and roll the dough thinly.

Cut out squares or shapes using a cookie cutter.

Arrange crackers on a lightly greased cookie sheet.  Or use your silicone mat.
 
Prick each cracker in 2 or 3 places with the tines of a fork.

Bake for 15 to 20 minutes, turning over once during baking. These crackers should be medium brown.  Cool on a rack.

Also....just finished baking these and they are delicious! I was wondering if you would allow me to share this recipe on a Gastroparesis Blog? It's not my blog, but one I follow and this recipe is perfect for people like me with Gastroparesis (paralyzed stomach who cannon digest fat, fiber, etc.) Of course, credit would be given to you and your site :)
