Vegetarian Barbecue Bites (Meatless Meatballs)
- 1 medium onion chopped
- 1 cup of crushed corn flakes
- 3/4 cup chopped walnut
- 4 eggs
- 2 cups shredded cheese (I used old cheddar)
- 2 TBSP oil
- Barbecue sauce to cover or for dipping**recipe**great recipe for barbecue sauce without hfcs in it! (I used bottled sauce that I had on hand, click recipe to see Laura's!)
- Mix all the ingredients except oil, let stand for 30 minutes
- If making barbecue sauce you can assemble it now and let it simmer on low
- Then over medium high heat heat 1 TBSP oil in a frying pan
- Make 18 patties or meatballs out of the cheese and walnut mixture
- Cook 9 at a time until they are browned on both sides
- Put them in a 9x13 baking dish
- Cook remaining patties the same way
- Pour barbecue sauce over the top
- Cover with foil bake 15-20 minutes
As for the family, the kids absolutely loved them!!!! So It will be a part of our meals, more considered as "treat", and for entertaining!

I bake my regular meaty meatballs before putting them in sauce, so I don't see why baking these would be a problem. I'm going to try this too!
Wow. What an interesting idea. We've been trying to eat healthier too and hubs wasn't excited about the meatballs the other night.
At first I assumed these were made with soy meat. I'm so excited to se that they aren't and still sound awesome. Maybe I'll give them a try baked and let you know how they went. Thanks for the great recipe!
This is a clever recipe! My bet is they are a nice alternative for non-meat nights, and taste pretty tasty with the bbq sauce! Sweet idea!
what an interesting concept...i wonder if i could make them and fool my husband!
kinda like black bean brownies!

They look just like meatballs!! what a great recipe, I would just have to watch our for nut allergies at school....but as long as I post it we should be ok!
thanks for sharing!
I never would have guessed that these were cornflakes and walnuts! What an interesting idea! Thanks!
This would be a great one for My Meatless Mondays. It is an excellent way to sub out the meat. I just opened it up. If you want to, please share with us.
Thanks for sharing this with My Meatless Mondays. I just printed it up. I think, I am making quiche tonight but if I don't, I would love to make these. I have to sub for the cornflakes since hubby can't have them.
Oh yum, I will def be giving this recipe a go!
I'm definitely curious! These look really good! I'm bookmarking for later.
Thanks for joining me for Friday Favorites!
Came back to let you know that I'm featuring you this week for Friday Favorites!
Those sound really yum! And totally seem like you could just bake them!
What an interesting recipe. I think I will have to give this a try. Kind of like a veggie burger :-)
Hmm...how could I sub out the four eggs? That is a lot of egg to not have for something like "meat"balls.
If I can figure it out, dh would be THRILLED! :D
