Gluten Free Banana Pancakes! Kids love them!

Banana Pancakes

I found this recipe on Pinterest and just had to share!  This recipe is so easy and fast!  Perfect for school mornings!  Send the kids off with a healthy hot breakfast!
These 2 ingredient pancakes are so YUMMY!  I like to add cinnamon to mine!  I always store ripe banana's in the freezer.  And we always have eggs!
Cook them slow and small for best results!  There is no need to add syrup! They are sweet enough!

Let me know if you try them and how much you like them!

Roasted Peppers! So Yummy! So Easy!

Roasted Peppers
I love roasted peppers!  And when I found out how easy it was to make them I couldn't believe it!  It is so easy!  Now I do two different methods depending if it is snowing.  It is not snowing now, it is actually very nice October weather.  Perfect for using the BBQ!

All you have to do is...
  1. Throw whole peppers on the BBQ.   (no need to cut them or oil them)
  2. Char the skins all around.
  3. Put peppers in a bowl and seal them up with plastic wrap or a lid if you have one.
  4. Let them steam for a bit, then cool for a bit.
  5. Peel and deseed the peppers. (The skins will peel off so easy!)
  6. Pull them apart into wide sections,  letting inside juices drip in the container you are storing them in.
Your done!

The Winter method is to use a gas stove.
  1. Use tongs and char peppers with the gas burner flame.  (No pan needed)
Follow above steps 2-6

So easy!

You can put them in your lasagna, on pizza, on pasta, on salad, on sandwiches, in dips, and the possibilities are endless!  Try them you will be so glad you did!

Grilled Lime Chicken with Yummy Chipotle Sauce!

I was inspired to cook this meal when I recieved my first farm share of the season!  I paired the chicken with an easy fresh cole slaw!

Ingredients:
9 boneless skinless chicken thighs
1/2 cup plain yogurt
1 lime, juiced
1 tbsp olive oil
4 cloves garlic
1 tbsp paprika
1 tsp rosemary
1 tsp fresh ground black pepper

For the Sauce:
1/2 cup yogurt
1 lime juice
2 tsp chipotle sauce

Directions:
  1. Mix all ingredients in bowl or bag and marinade for 2 hours.  You do not want to marinade to long when using yogurt as a base.
  2. Then make the sauce and refridgerate till ready to serve.
  3. When ready, grill till cooked!  The nice thing with thighs is that they are so easy and fast to grill!

Check out all these yummy veggies in our first farm share!  We opted to get a full share this season along with eggs!
