Stuffed Tomato for One a "Raw" Recipe

I am starting to add "raw" recipes to our meal plans!  This is a tasty easy recipe that only requires a food processor!  Perfect if you are making lunch for one.  Of course you can double/quadruple the recipe if making for more than one.  I did have more mix that didn't fit into the tomato, you can save for later or share with a friend...perhaps put it in to a lettuce leaf!


Stuffed Tomato for One


Ingredients

  • 1 tomato cut in half,
  • 1/4 cup of soaked sunflower seeds (soak 1 hr in water, then drain), 
  • 1/4 teaspoon of mustard powder, 
  • half a stalk celery, 
  • finger sized carrot, 
  • 1 green onion, 
  • 1 small clove of garlic, 
  • a squirt of lemon juice to taste, 
  • Optional - Add your favorite spices. (dill, cilantro, curry, paprika, etc).
Hallow out half of your tomato, throwing all tomato remains in food processor.
Process all ingredients.
Scoop mixture into tomato half.
Enjoy this very healthy lunch beside extra celery, and carrot sticks!

Pomi + Gnocchi = YUM!

As a "green" mom I try to find products that are natural and BPA free!

We all know that many of our canned foods leach BPA chemicals.   

Eliminating canned foods takes some work.  But, here is the good news!  There are readily available alternatives to most canned foods like fruit, vegetables and beans.  You can buy fresh, frozen, or jared.  When it comes to tomato's this is my method of "canned" tomatoes.  But being a busy mom sometimes you  don't have time to wait for tomatoes to thaw.  So I was very pleased to find another alternative to canned tomatoes!

They are chopped, and strained, perfect for all your fave recipes of sauces, soups, pasta and any recipe calling canned tomatoes!

Pomi is available at select Whole Foods Markets, Stop & Shops, Shop Rite, Publix markets, and Hannaford stores. I would call ahead of time to make sure they carry or even ask them to carry it! They are also available in smaller natural, organic or Italian specialty stores.

And now a yummy recipe!  This recipe is from a very good friend of mine!  This meal was shared with 8 people with leftovers...would be perfect for freezer cooking, and great for a potluck dish!


Ingredients
  • 3  packages of gnocchi (fresh or frozen) cook as directed (one batch at a time!)
  • 1 box of Pomi
  • 3/4 cup finely grated parmesan or cheese of choice (even cheddar works, as long as it is tangy and hard)
  • 1 cup finely chopped greens (chard/spinach/parsley)
  • 1/4 pound of bacon (or proscuitto), diced
  • 1/4 cup onion, finely chopped
  • 1/4 cup sweet pepper/celery/carrot, finely chopped

Bring water for gnocchi to a boil. Cook gnocchi as directed.
Meanwhile - fry bacon, until fat is released, drain and set aside. 
Fry onions and vegetables until softened and set aside. 
Add Pomi to pan bring to a simmer.  Whisk in cheese until dissolved completely.  Stir bacon, onion and vegetables back into sauce.  Cover and simmer 2 minutes.
Once the gnocchi is cooked (they should still be firm), drain and stir into sauce.
Garnish with parmesan and parsley.
 Enjoy!

Easy Healthy Bruschetta Bread

This is what I had for lunch today!   I make this recipe with what ever buns or bread I have handy!  Focaccia bread is my favorite!  I wanted to make this recipe healthier with leaving out all of the extra oils!   Some oils are healthy for you but once they are heated up all the goodness disappears! I always add oil after the food is cooked!  
This is so tasty I hope you will give it a try and let me know what you think!

Easy Healthy Bruschetta Bread
  • Fresh tomato, diced
  • Mushroom, diced
  • Green onion, sliced thin
  • Seasoning, I used a garlic blend with no salt added.
  • Mozzarella cheese, small cubes
  • Bun

Put all ingredients on a bun and slip into the oven.  Heat until bun is toast and cheese is melted...you do not want to cook the tomatoes.  Enjoy!

This is my comfort food.....Mmmmm!

Black Bean and Corn Quesadillas

Tonight We had Black Bean and Corn Quesadillas!  Unfortunately they were so good, that I forgot to get the camera to snap some pics of it :(  Cause we were all eating them up so quick!

So since I planned ahead I knew that I would have to soak some black beans...no more "I forgot", cause I planned ahead :)  If you know me I am more of a last minute kinda gal!  But I have heard you can freeze cooked beans to use for later...ah but I have the time so no matter.

So today was bread making day! er....Tortilla making day!  I have such a simple easy recipe to make tortillas!  I bet you could make them with what you have in your cupboard right now!  And do what I do and wrap up half the dough and put in the freezer till later!  So handy when you want tortillas at the last minute :)  Just thaw and make!

So this is so simple and easy to make!  Use what you have in the fridge!  Tonight I used...
tomato diced
green onion sliced
cooked black beans
frozen corn
jalapeno pepper
shredded cheddar cheese

Put what you like in a tortilla, fold in half, bake till cheese is melted!
So simple! So yummy!  No extra seasoning required!
Eat it with a side of salad and Enjoy!

For fun I let everyone make there own!  Kids love making there own and it really helps if you have a picky eater!

Salsa

I made this yummy salsa for the enchilada's.  I prefer my salsa fresh like the first pic...But you can cook it up so it is more like the kind you buy at the store.  Jay likes it that way...So I do both  :)


diced tomatoes you can use your frozen ones or fresh
thinly sliced green onion
chopped cilantro leaves
lemon or lime juice
garlic clove crushed
green chili pepper
Diced Peppers
other add ins corn and black beans  Yum


Mix all together and refrigerate!

Tomatoes Not Canned

So many recipes ask for canned tomatoes.  A friend told me how to make my own "canned" tomatoes....no can required.  And it works!  And it is the same price as canned!  

Purchase roma tomatoes, organic if you can when they are on sale.  And freeze them!  Easy!
Take out about 3 tomatoes and thaw.
The skins will slip right off.
Dice or puree. 
Use in any recipe that calls for canned tomatoes
Enjoy!
